Simple Summer Weeknight Dinner (low carb)

This past weekend, I experienced something for the first time in my life--a wedding of two people over the age of seventy-five. My husband's Grandma married a man from her church in small, sweet wedding ceremony that included her kids and even some grand kids. The pastor talked about making the most of their "twilight" years and being a team in their service for Christ and each other for as many years as they have together. It got me thinking of the marriage years I'm in right now, and how I don't want to waste a single day with Drew for however many years we have. All that deep thought resulted in me thinking of a dinner I could make him that included some of his favorite flavors. I'm a firm believer in the "little things" that show love day in and day out and create an environment of thoughtfulness and fun for the other person, so here's how our little dinner went down:

This Taco Bell specialty is one that I am slightly glad to say I have never personally eaten, but Drew talks about with it hearts in his eyes from his college soccer trip days. I'm not sure if it's because I'm a bad wife or he's just considerate, but he's never suggested Taco Bell as a date night in our three years marriage. To be fair, I've never been and I'm sure they are better than the image I have in my head......maybe

Drew is also a HUGE fan of these Virgil's Zero Calorie Root Beers! If you like some carbonation every once in a while, these are a great product to try! (I buy them at Whole Foods or Sprouts)

As you can see, by changing the ingredients slightly, we were able to make the meal significantly less heavy and calorie-laden. The above nutrition profile did not include the roasted corn salad or the watermelon, but you get the idea! Choose your ingredients a little more carefully and without even trying to hard you can cut unnecessary calories that are sneaking into your foods and making it harder to reach your goals!


Ingredients:

  • 3/4 Joseph's Lavash Bread (found at Wal-Mart Neighborhood Market)
  • 1 serving (1/4 cup) Fat Free Shredded Cheddar Cheese
  • 1/2 Cup Thinly Sliced Bell Pepper
  • 1/2 Cup Thinly Sliced Onion
  • 3 oz. Grilled Chicken
  • 1 Tbs Guacamole (I used Avocado + seasoning packet + cilantro)
  • 2 Tbs Thick & Chunky Salsa- Medium (I used Ingles brand)
  • Thinly sliced Romaine Lettuce (optional)

Directions:

  1. Cut chicken into 2 inch cubes, season with Trader Joe's Chili Lime Seasoning, salt and pepper and cook in on medium heat using non-stick spray.
  2. Sautee peppers and onions over high heat until they are soft or a little crispy if desired.
  3. Make Guacamole using preferred method. I used 1/2 avocado and 1/4 packet of seasoning found in the produce section of Ingles or Publix and added fresh cilantro
  4. To make the wrap, place the ingredients in the middle of the flatbread, then start folding in the outsides until it is a pocket. I pressed down the middle and sprayed a little non-stick spray at on the folded middle and placed it folds-down on a medium heat pan. Allow to cook 2 minutes on each side and enjoy!!

 

I think this would be a fun family dinner idea in the summer if there were toppings that each person could choose to fill their crunchwrap with similar to a personal pizza. The folding might need adult assistance, but they really are pretty simple to eat, yummy and filling! The side dishes I chose were a roasted corn, cucumber and green bean salad and a big bowl of watermelon. How much more relaxed does it get??
