Southwestern Breakfast Egg Bake

I had no idea this egg bake would be so highly requested, but it makes perfect sense:

This recipe could be tweaked to fit anyone’s macros (more beans, whole eggs, rice, no meat, full-fat cheese instead of fat free), but here’s mine:

This was a small pan (6X8) and I suggest DOUBLING the recipe for a 9X13 size

INGREDIENTS
 

  • 10 Egg Whites
  • 2 Whole Eggs
  • 7 oz 97% Fat FreeLean Ground Turkey
  • 85g (one serving) Trader Joe’s Fire Roasted Vegetables
  • Fajita Seasoning
  • 1/2 Cup Black Beans
  • 28g (1 servings Fat Free Cheddar Cheese

DIRECTIONS

  1. Pre-heat the oven to 400 degrees
  2. Brown the turkey until cooked with taco seasoning (I used ¼ package), add in two servings of Trader Joe’s Fire Roasted Vegetables and allow them to cook until unfrozen.
  3. Whisk together 10 egg whites and two whole eggs and season with salt and pepper (cayenne if you want a kick).
  4. Add turkey and veggies into greased (I always spray with coconut oil) pan, add rinsed black beans and combine, then pour the egg mixture on top.
  5. Sprinkle the top with fat free cheese and bake for 35 minutes or until eggs are cooked through.

Top with salsa or avocado and enjoy!

I knew I would use this recipe again, so I created it in my Fitness Pal so that I could refer back to it in the future and make it easy to track. I highly recommend doing this with recipes you want to make again and again
