I'm going to change your perspective today--are you open to it? I'm not easily persuaded either, so I know it might be a challenge, but I don't back away from those quickly.
Can delicious pancakes help you lose weight, improve your skin and strengthen joints?
Seems like a tall order and probably goes against most everything you know about this dessert posing as a breakfast food. Don't misunderstand me, there is a time and place for pancakes topped with Nutella, strawberries and whipped cream, but it isn't going to get you the benefits I just mentioned.
If you've been reading this blog, or really any guide to nutrition, then you've hear all about the importance of protein for building muscle tissue, feeling satiated longer, and helping your body use carbohydrates as fuel instead of storing them as fat. BUT, have you heard the benefits of protein combined with COLLAGEN?
Why Collagen?
Collagen a vital building block of our bodies including skin, hair, nails, bones, and joints. Our bodies cannot synthesize enough collagen on their own and our diets today contain minimal collagen, so supplementing your current diet with this powerhouse is important. The easiest way I've found to incorporate collagen into my diet has been through a supplement line that has done the work to make it a seamless addition to recipes I already use regularly--Vital Proteins. As you can see, I simply used two products (collagen peptides) and (vanilla coconut collagen whey) to combine my protein needs while getting the collagen boost with no alteration to the delicious pancakes I love.
Ingredients
- 1 Scoop Vital Proteins Collagen Peptides
- 1 Scoop Vital Proteins Vanilla Coconut Collagen Whey
- 3 oz Liquid Egg Whites
- 2 TBS Coconut Flour
- 1/4 TSP Baking Soda
- Stevia to taste (I added a squirt of liquid kind)
- 1-3 TBS Water as needed for desired consistency
Toppings
- 1/3 Cup Frozen Berries (microwaved 35 seconds and mashed for 'syrup")
- Walden Farms Zero Calorie Pancake Syrup
Directions:
- Combine all pancake ingredients, mix well and add additional water slowly to thin batter to desired consistency.
- On medium heat, spray pan and pour batter. Allow to cook 2-3 minutes on each side or until golden brown.
- Microwave berries for 35 seconds and mash them until they become easily spreadable as a pancake topping
- Top with syrup of your choice and enjoy!
Calories: 231 16 carbs/3 fat/ 34 protein
The above statistics might not seem impressive until you see a comparison. Maybe this will help my original challenge-- to change your perspective.
